Have you heard of banana swirl yet? It’s got to be one of the newest healthy dessert crazes to hit the internet. Even my toddler knew what it was before I started making it. I want to say she saw it on PBS one day and has asked for me to make it for her ever since. Well kid, consider your wish granted. This recipe is super simple. The basic recipe is just frozen bananas pulverized in a blender until it’s the consistency of ice cream. Yum! And talk about much healthier than your typical ice cream. But of course, I couldn’t just leave well enough alone. One of my favorite food combinations has to be bananas, peanut butter and chocolate chips. So I decided to give it a go.
It’s simple enough, just freeze a few bananas at least an hour before you’re planning on making this treat. I used one banana per person. To a blender I added 1/2 tsp of vanilla, 1 heaping tablespoon of peanut butter, about 1 tablespoon of chocolate chips, and the three frozen bananas. Then blend. I tried using a food processor without much success and even my blender had some trouble. Let’s just say there was a lot of pulse, stir, pulse, stir going on. Hopefully your blender is better than mine.
In the end you’ll have the perfect summer treat. Just enough chocolatey sweetness but without all the guilt of ice cream. If you’re worried about an overwhelming banana flavor, don’t be. It’s surprisingly mild. The best part, Sophie loves it, and I love being able to give her dessert that has some nutritional value and isn’t just pure sugar.
